一到夏天,有一种“晶莹剔透、冰爽怡人、且物美价廉”的消暑圣品就会在四川的大街小巷流行开来。
不管正宗与否,几乎家家都打出“葡萄井凉糕”的牌子,吸引众人的眼球。
为何冠以“葡萄井”三个字的凉糕就会特别招人喜欢?
原来在宜宾长宁双河古镇东门往南,有一眼终年“汩汩流淌”的活水,这水便是从葡萄井里流出来的。早在清朝光绪年间,双河镇百姓用葡萄井水制作的凉糕就很出名了,进士杜德舆的《舆地纪胜》上这样记载着:“来此避暑纳凉者甚多,名小吃凉糕嫩凉驰名”。
据《长宁县志》记载,葡萄井建于宋代,历代都加以修葺。泉水清冽,气泡群从井底涌出,连珠累累,扶摇而上,状若葡萄,晶莹碧透,因此得名!

冷却后的凉糕用竹刀分割,传统的凉糕调味都是用纯真香甜的红糖水。红糖要切细后蒸化,再过滤,最好能起糖丝,“一个环节都不能走样,才是正宗的双河凉糕”。
